Ok, here’s my moms recipe;
2- medium zucchini, sliced thin no seeds
1- lg diced onion,
3-4 basil leaves chopped fine
in large pan, sauté it all in a few tbsp of olive oil. Remove from heat, then add 1/2 small can of tomato paste, 1 tsp nutmeg, 1 tsp thyme, salt and pepper
1 cup Italian breadcrumbs , 2 eggs, about a cup of Parmesan and Romano cheese Mix all together. Grease a 9×9 pan- add mixture then sprinkle the top with Parm/Romano cheese mix, a little more breadcrumbs and drizzle a little olive oil – bake at 350 for 40-45 min until bubbly and brown. Serve it warm or enjoy it cold!
